We do sausages. Exceptional sausages. Our butcher in Bermondsey makes them to our spec: coarse-ground, natural casing, no rusk. The classic pork & fennel is our bestseller, but the wild boar & apple is the dark horse, and the vegan beetroot & black bean has won over people who swore they'd never eat a non-meat sausage. Every sausage is char-grilled on our plancha and served with silky mash (Maris Pipers, real butter, don't ask about the calories), proper onion gravy, and a choice of mustards. We set up a serving station that looks like a posh British pub, complete with wooden boards and metal camping cups for the gravy.
