About Pitta Perfect
Our shawarma is marinated for 72 hours and stacked on a vertical spit that rotates in the truck window — it's basically a neon sign that says 'come eat'. We carve it thin, stuff it in warm pitta with toum (garlic sauce that's basically garlic mayonnaise on steroids), pickled turnip, and a drizzle of tahini. But the thing that surprises people is our manoushe — a Lebanese flatbread topped with za'atar and olive oil, baked in our deck oven in 2 minutes, and served hot and fragrant. It's like pizza's cooler, simpler cousin. We also do a fattoush that uses our day-old pitta fried into croutons, because wasting bread is a sin we take seriously.
